
Fitzgerald's Woodlands House Hotel & Spa places sustainability at the core of their business.
They already have a variety of sustainability initiatives in place. These include the installation of a CHP system and 90kw solar farm, providing over 60% of the resort's electricity. The hotel has a waste-water treatment plant on-site, using mini toiletries and micro beads to eliminate plastic waste. Energy reducing measures have also been implemented in 84 out of 89 bedrooms, such as reducing water flow through showers, taps, and toilets, as well as installing LED bulbs.
The family owned business have always had a strong connection to the environment since the inception of the hotel and Mary’s Organic Garden in the 1970s. Fresh, local and organic produce in the kitchen is an integral part of their menus. The team cares about the food they serve their guests but also how this food impacts the environment.
This is when Richard Fitzgerald, Operations Manager, came across Positive Carbon. “Sustainability is not only very important to our business but to our family too, we want to make sure to minimise the carbon footprint we leave behind. The key challenges for hotels when it comes to food waste is a lack of visibility. If chefs and management are unable to see what goes in their bins they cannot effectively prevent the issue from occuring in the first place. Food waste occurs at all stages of the process from purchasing, processing and serving. Once there is real-time data on this food waste, kitchens can identify where and why it is happening and to make the necessary changes.
